Spicy Tuna with Melon Salad & Whipped Cauliflower

I had so much watermelon from my CSA share, I needed to find a new way
to use this versatile melon. The result was a cool watermelon-cantaloupe
salad with the flavors of a salsa that complement the spicy tuna. The
whipped cauliflower calms the taste buds and can be made year round as a
nutritious side dish. The dish is medium on the spice scale but if you want
less heat, you can cut back the jalapeño in the salad, and substitute olive
oil for the chili oil in the tuna recipe. Two things to cool your mouth
from the heat - a glass of milk, or unsalted peanuts!! Enjoy!!
Spicy Tuna

4, 6 ounce tuna steaks
|
Kosher salt
|
|
2 teaspoons chili oil*
|
freshly ground black pepper
|
Brush both sides of tuna steaks with chili oil and season with kosher salt and
freshly ground black pepper.
Heat a grill pan over medium-high heat. Add tuna steaks and grill for 3 minutes
per side for medium rare, or continue cooking to desired doneness. Serve with melon salad.

Melon Salad
|
1 ½ cups one inch diced cantaloupe
|
2 tablespoons chopped cilantro
|
|
1 ½ cups one inch diced, seeded watermelon
|
4 scallions, white and green parts, chopped to yield ¾ cup
|
|
¼ teaspoon lime zest
|
2 teaspoons minced jalapeño pepper
|
|
Juice of ½ lime
|
¾ teaspoon kosher salt
|
Combine all ingredients in a bowl and toss until well combined. Allow salad to sit one
hour for flavors to develop.
Whipped Cauliflower
|
1 head cauliflower, cut into florets
|
¾ teaspoon kosher salt
|
|
2 tablespoons unsalted butter
|
½ teaspoon freshly ground black pepper
|
|
½ cup milk
|
pinch of nutmeg
|
|
¾ cup freshly grated parmesan cheese
|
|
Bring a large pot of water to a rolling boil. Add cauliflower florets and cook until tender, 10-15 minutes. Drain cauliflower and add to a food processor fitted with a steel blade. Add butter and pulse until cauliflower begins to break down. Add half of milk and pulse continuously until mixture is a smooth puree, adding remaining liquid until desired consistency is reached. You want the mixture to resemble whipped potatoes. Remove puree from processor and add remaining ingredients. Serve warm. These can be reheated with good results. Serves four.
