Amanda's Potato Salad

2 pounds potatoes, red bliss
|
salt
|
|
1 bunch cilantro, chopped and washed
|
pepper
|
|
2 teaspoons minced garlic
|
¾ cup olive oil
|
|
¼ cup cider vinegar
|
1 bunch organic spinach
|
Quarter potatoes. Cover with water and bring to a boil until soft. Drain
and put warm potatoes in a bowl. Sprinkle with vinegar, salt and
pepper. Stir garlic into olive oil. Sprinkle cilantro on potatoes and toss
with dressing and spinach.
