Amanda's Potato Salad Debra's Natural Gourmet

 2 pounds potatoes, red bliss  salt
 1 bunch cilantro, chopped and washed  pepper
 2 teaspoons minced garlic  ¾ cup olive oil
 ¼ cup cider vinegar  1 bunch organic spinach

Quarter potatoes. Cover with water and bring to a boil until soft. Drain and put warm potatoes in a bowl. Sprinkle with vinegar, salt and pepper. Stir garlic into olive oil. Sprinkle cilantro on potatoes and toss with dressing and spinach.
